A private chef at a Palmilla villa is not a restaurant reservation with better furniture. It is kitchen ops: mise, dietary control, grocery honesty, and a cadence that keeps the residence quiet.

What is usually included vs on request
Often included with a staffed home: house manager, daily housekeeping, and sometimes a cook for breakfast or a light welcome dinner. Read the lease.
Usually on request (line-item): full private chef for lunch/dinner service, multi-day tasting cadence, specialty cuisine, bartender or service staff beyond the house team.
Never assume “staffed” means “chef every night.” Confirm the meal count in writing.
The dietary brief (what actually helps)
Send preferences ~72 hours out when possible:
1. Headcount by meal (kids vs adults)
2. Allergies and hard exclusions (not “we prefer healthy”)
3. Celebration nights vs quiet nights
4. Cuisine lean — default on our desk is coastal Mexican: ceviche / aguachile, grilled fish, al pastor or asada, fresh salsas — not a generic farmhouse salad unless requested
5. Whether morning sportfish should plate the same evening (catch-to-table)
Western / kids menus are fine. Ambiguous “surprise us” briefs produce waste and a nervous kitchen.
Grocery-at-cost honesty
Typical first shop: breakfast staples, fruit, sparkling water, kids’ snacks, coffee brand, bar basics. Receipts at cost unless the villa package already includes provisioning. Cadence that works on a Palmilla week
Sample arc we actually book:
- Arrival night — light dinner so jet lag does not meet a seven-course show
- Mid-week market-to-table — after a San José or market morning
- Catch-to-table — only when a boat day is confirmed and the captain/chef can cold-chain fillets
- Farewell — one paced feast under the stars or on the terrace
Do not stack Cabo Pulmo (full East Cape day) with a late tasting menu the same night unless the group is built for it — Pulmo logistics.
Who it fits
Multi-gen families who want control of spice and bedtime. Principals who prefer the table at home to marina noise. Celebration groups that still want a soft curfew. Solo or couple weeks that want two chef nights and grocery autonomy the rest of the stay.
Shortlist homes for a chef week
Filter the collection for staffed beachfront or ocean-view Palmilla homes with a real kitchen — then we confirm chef status on hold. Beach truth still comes first (swimmable Palmilla); a chef cannot fix a wrong shore.
