From a Palmilla villa
Opposite of a resort tasting menu. Sample arc: afternoon arrival → settle into ranch lodging → golden-hour walk of the property → early morning light farm work (feed, gather, kitchen prep — paced for guests, not a labor camp) → traditional birria process with lamb raised on site. When the agreed experience includes on-ranch harvest, the ranch team handles it humanely and out of spectacle; we brief every guest in advance so nobody is surprised. Not for every palate or every child — we offer a non-harvest kitchen track (market lamb / goat) when preferred. Ends with a long table meal and a quiet night under sierra stars.
